My seventh grade PE teacher was obsessed with carrots. When he was not drinking carrot juice, he was gnawing on a raw one like some sort of anthropomorphic Bugs Bunny with #FF660 skin tone. While I do not have the fervent love of carrots that my one-time teacher had, I do like them. Occasionally, I will even seek out a recipe in which they are the star ingredient. One such recipe that I stumbled upon recently is Karen’s “Roasted Cumin Lime Carrots.” To say that her recipe is good is an understatement. It is a must try.
