Kale is the Clint Eastwood of the greens world—wrinkly, yet hearty. And since it often takes a back seat to the pedestrian lettuce set, I figured I would give it some play time by featuring it for today’s “Healthy Eats.”
Recently one of my Pinterest friends pinned “Kale Salad with Butternut Squash” from Nutrition to Invigorate Mind, Body & Spirit. I was excited to find the recipe, and I plan to try it very soon. It will be nice to have a kale salad for a change, as most of my consumption of it of late has been via soup.
