I am a huge fan of winter squash, Delicata my easy favorite. The amount of squash I consume in a given winter / spring could probably fill two-thirds of one-half of the volume of a 1987 Toyota Tercel’s trunk.
Always on the prowl for squash recipes, I came across “Baked Butternut Squash Fries” on Andie Mitchell’s site, Can You Stay for Dinner a few months ago. Personally, I like to swap Delicata for Butternut; either way, however, her simple recipe is great.
